Instructions
  1. Preheat oven to 400 degrees and
  2. Mix the crushed pecans, shallot, Parmesan cheese, parsley, salt, pepper and garlic powder
  3. Whisk eggs until smooth in a bowl and put finely crushed pecans mixture on a large plate
  4. Dredge each piece of fish in egg and then dip in the pecan mix. (Nut mixture will not stick as well as flour and this is ok. You should have some leftover nut meal after lightly coating the fish.
  5. Carefully place each piece in a large baking dish
  6. After all fish is in dish, put any remaining nut meal mixture on top of fish and pat down
  7. Pour melted butter over fillets and squeeze ½ the lemon over fillets
  8. Put fish into oven and bake 15-20 minutes until cooked through and starting to flake
  9. Serve over cooked spinach with other half of lemon and enjoy!

Growing up in a small town in the foothills of North Carolina and attending the University of North Carolina at Charlotte, I always dreamed of working on the coast. I earned my degree in Marketing/Branding and started to build a life with my spouse and son. Together, we enjoy fishing, going to hear live music and spending time with family. At home I love to cook and write recipes, take on DIY home improvement endeavors and grill out with friends. Being a part of the Carolina Marketing Company team has showed me that you really can enjoy your job, and we feel like a family. I am truly grateful to have a career I love.
